Ingredients
Pizza Sauce
28ozcanned whole peeled tomatoessuch as San Marzano
2Tbsextra virgin olive oil
½tspgarlicgrated or minced
½-1tspred pepper flakesoptional
¼tspsalt
¼tspblack pepper
½tspItalian seasoning
1Tbssugar
For the Pizza
1store bought pizza dough
flour for dusting
olive oilfor shaping the dough
2Cshredded mozzarella cheese
¼Cgrated Parmesan cheese
pinchdried oregano
Instructions
Pre-heat oven to 500°
Remove dough from fridge, turn dough out onto a floured surface and with lightly floured hands, tuck all ends of dough underneath to form into a ball. Let sit out at room temperature for at least 30 minutes
Place cast iron skillet in pre-heated oven for at least 10 minutes
Making the pizza sauce
Pour the tomatoes into a bowl and crush into small pieces discarding the stem ends if desired
Add the olive oil to a large skillet, heat to medium and add in grated garlic and red pepper flakes (if using); cook just until garlic is fragrant, don't let it get browned
Add in tomatoes, a little at a time to avoid splatter, then add salt, pepper, Italian seasoning & sugar; stir well to combine
Cook for about 10 minutes, stirring occasionally until the sauce thickens a bit
Remove from heat and set to the side
Making the pizza
Very lightly oil an area to work the dough (your counter top is perfect)
With a bit of oil on your fingers to prevent sticking, start working the dough out into a circle, rotating as needed until the dough is about 1" larger all around than your skillet
Remove cast iron from oven and oil inside with olive oil with either a pastry brush or a waded up paper towel, be cautious of the hot skillet
Add the pizza dough to the skillet and carefully push the dough out so it fill the entire skillet
Using a large spoon, add about 1/4 C of sauce to the center of the dough and move around to cover the dough leaving however much crust you would like
Cover sauced area with shredded mozzarella cheese, them with a generous sprinkle of Parmesan
Finish with a light sprinkle of dried oregano
Place in the lower 1/3 of your oven and bake for about 10 minutes or until the crust is a golden brown
Wait about 5 minutes before slicing
Notes
You can make the sauce 1-2 days in advance just let cool completely before refrigerating
Sauce will make enough for 3-4 pizza's; freeze the unused portion
