Skinny Chicken Parmesan

Ingredients
- 1 lb chicken cutlets thin sliced type
- 1Β½ C Panko breadcrumbs
- 4 Tbs Parmesan cheese grated & divided
- 3ΒΌ tsp Italian seasoning divided
- Β½ tsp salt
- ΒΌ tsp black pepper
- ΒΌ-Β½ tsp crushed red pepper flakes optional
- 2 eggs
- 2 Tbs water
- 1 C all-purpose flour
- 4 basil leaves sliced into thin strips
- Β½ C mozzarella cheese shredded
- 12 grape tomatoes cut in half

Instructions
- Pre-heat oven to 375Β°
Breading Station – Set out three bowls or trays
- BOWL #1 – flour
- BOWL #2 – eggs and water, whisked thoroughly
- BOWL #3 – Panko breadcrumbs, 3 Tbs of Parmesan cheese, 3 tsp Italian seasoning, salt, black pepper and red pepper flakes if using, mix to combine evenly
Breading the chicken
- One at a time, lightly season each piece of chicken with salt & pepper
- One piece at a time, thoroughly coat each piece of chicken in flour, then the egg and then the panko – press the panko into the chicken so it stays on well
- Place onto a lightly oiled wire rack on a baking sheet, cooking spray works the best
- Gently lift each piece of chicken and spray with cooking spray on both sides
- Top each piece of chicken with 1/4 each of the basil, mozzarella, the tomatoes
- Sprinkle each with some of the remaining Italian seasoning & Parmesan cheese
- Bake at 350Β°on center rack for about 30-35 minutes until golden brown and internal temp is 165Β° – time will vary depending on your oven and thickness of your chicken
